French Onion Soup
3 large onions, thinly sliced
1/2 cup butter
6 cubes beef bouillon
4 cups hot water
1 tsp Worcestershire sauce
1/2 tsp salt
1 cup grated Parmesan Cheese
1 green pepper, sliced
In a large skillet, cook onions in butter until lightly browned.
In a pot, combine browned onions in butter with beef bouillon, hot water,
Worcestershire sauce and salt. Cover and cook on low 4 - 6 hours. Divide
into baking bowls and top with cheese and green pepper slices. Broil until
cheese is bubbly. Serves 4
Broccoli Casserole
2 pkgs frozen Broccoli, thawed
1/2 c Butter or margarine
1/2 lb Velveeta cheese
1/4 lb Ritz crackers, crushed
Preheat oven to 350 deg. Prepare broccoli as directed on the package,
drain well. Melt Velveeta cheese with half of the butter and stir into
broccoli. Spoon into 9 x 13" pan. Using the remaining butter, melt and
stir into crushed crackers until well coated. Sprinkle cracker mixture over
broccoli. Bake 20 - 30 minutes uncovered.
Chocolate Carmel Brownies
4 Squares Unsweetened baking chocolate
3/4 cup Butter
2 cups sugar
4 eggs
1 cup flour
1 1/2 cups walnuts or pecans, chopped
14 oz Carmels, unwrapped
2 T Milk
1 1/2 C Semisweet Chocolate chunks
Place Chocolate squares and butter in large microwave bowl.
Microwave on high for 2 min or until butter is melted. Stir until
chocolate is completely melted. Add sugar and stir until well blended.
Stir in eggs. Add flour and nuts and mix well. Spread into 9 x 13" pan,
lined iwth greased foil. Bake at 350 deg for 30 - 35 min.
Do not overbake!! Place caramels and milk in microwavable bowl.
Microwave on high for 2 1/2 min, stirring after 1 min. Stir until caramels
are completely melted and mix is well blended. Gently spread caramel
mixture over brownie in pan. Sprinkle with chocolate chunks. Cool in
pan on wire rack. Lift out of the pan onto cutting board and cut into
squares. Makes 2 dozen
Homemade Noodles
3 eggs
3 - 4 cups flour
1 tsp salt
2 - 4 T water
Beat eggs. Add 1/4 cup flour and the salt. Work in remaining flour and
water. Roll dough out and dust with flour. Cut into strips and hang to dry
(no longer than 30 min). To use, boil in water to the desired consistency
and use in your favorite recipes.
A few helpful hints and cooking tips from the book:
WHEN cooking vegetables that grow above ground,
the rule of thumb is to boil them uncovered.
TO cut down on odors when cooking cabbage, cauliflower, etc.,
add a little vinegar to the cooking water
TO keep hot oil from splattering, sprinkle a little salt or flour in
the pan before frying
IT'S easier to thinly slice meat if it's partially frozen.
TO make "self-rising" flour, mix 4 cups flour, 2 tsp salt, and 2 T baking
powder, and store in a tightly covered container.
A few drops of lemon juice in the water will whiten boiled potatoes
AFTER stewing a chicken, cool in broth before cutting into chunks;
it will have twice the flavor
